Monica Maletti checks the balsamic in the glass ampoule, in the acetaia attic
The acetaia

Acetaia Meloria, where the casks have been murmuring since 1903.

It is not a plant: it is the loft behind the family villa, in Casinalbo di Formigine. The balsamic has been resting there for four generations, with the seasons coming in through the windows.

Four generations

Meloria was a grandmother's name.

She racked cooked must into the casks in the family attic. Nobody has moved them since: the same battery, the same house, the same slowness.

Today the children and grandchildren run the acetaia. We make about two thousand bottles a year: what the barrels allow, not what the market asks for.

How traditional balsamic vinegar is made

01

Harvest

Local Trebbiano and Lambrusco grapes from certified vineyards, picked by hand in late September.

02

Cooking the must

The must simmers over an open flame in an open pot for hours, until it concentrates.

03

The battery of casks

Six casks of different woods, from the largest to the smallest: each wood leaves its own aroma.

04

Racking and waiting

One racking a year, for at least twelve years. Then the drawing, always by hand.
